Ingredients
For the crust
- 2 1/2 cups all-purpose flour

- 1 tablespoon butter, cut into small pieces
Instructions
- Make the crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough just comes together. Divide the dough in half and shape into two discs. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Prepare the filling: Peel, core, and slice the apples into thin slices. In a large bowl, combine the granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss the apple slices in the sugar mixture to coat.
- Assemble the pie: Preheat oven to 425°F (220°C). Roll out one disc of dough on a lightly floured surface to a 12-inch circle. Place the dough in a 9-inch pie dish and trim the edges.
- Add filling: Pour the apple filling into the pie crust. Dot the filling with the butter pieces.
- Top with crust: Roll out the second disc of dough and place it over the filling. Trim the edges, crimp, and flute the edges of the pie. Cut slits in the top crust to allow steam to escape.
- Bake: Brush the top crust with milk or egg wash. Bake for 15 minutes at 425°F, then reduce heat to 375°F (190°C) and bake for another 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool and serve: Let the pie cool completely on a wire rack before serving. Serve warm with a scoop of vanilla ice cream or whipped cream.

- For a flaky crust, use cold butter and ice water.
- To prevent the bottom crust from getting soggy, pre-bake the crust for 10 minutes before adding the filling.
