Four glazed donuts on plate.

Overview

  1. Yields: About 12 donuts
  2. Prep time: 2 hours (includes rising time)
  3. Cook time: 15 minutes

Ingredients

For the dough

  • 1 cup warm milk (105°F-110°F)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • Vegetable oil for frying

For the glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Make the dough

  1. In a large bowl, combine warm milk, sugar, and yeast. Let stand for 5 minutes, or until foamy.
  2. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in salt.
  3. Combine wet ingredients with dry ingredients. Knead dough on a lightly floured surface for about 5-7 minutes, or until smooth and elastic.
  4. Place dough in a greased bowl, cover with plastic wrap, and let rise in a warm place until doubled in size, about 1-1 1/2 hours.
  5. Punch down dough and roll out to about 1/2 inch thickness. Cut out donut shapes using a donut cutter or a round cookie cutter and a smaller one for the hole.
  6. Let donuts rise on a lightly greased baking sheet for about 30 minutes.

Fry the donuts

  1. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 375°F.
  2. Fry donuts in hot oil for about 1-2 minutes per side, or until golden brown.
  3. Remove donuts from oil and drain on paper towels.

Note: consistent oil heat is important for frying, don’t add too many donuts at once.

Make the glaze

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.

Glaze the donuts

  1. Dip cooled donuts in glaze, letting excess drip off.
  2. Place glazed donuts on a wire rack to set.

Tips

  • For a richer flavor, use whole milk instead of skim.
  • You can add flavorings like cinnamon or cardamom to the dough.
  • For extra indulgence, top the glazed donuts with sprinkles or chopped nuts.

If you have a deep fryer it can help regulating your oil temperature.
